At Devils Creek Distillery, we are passionate about barrel aged spirits. In a process that should not be rushed, spirits aging in oak barrels undergo an almost magical transformation that is worth the wait for those patient few.
Starting in 2019, our patience began to payoff as the early release bottlings of our California Bourbon Whiskey and California Rye Whiskey were well reviewed by My Bourbon Journey Then in the midst of everything that was 2020, our California Rye Whiskey was featured on the Whiskey Vault’s Rare Whiskey Friday with Daniel and Rex. More recently, The Bourbon Van dropped a surprise review of our Bourbon!

Step off the beaten path and experience the unexpected – a bourbon whiskey made in California at 7,760 feet. Handcrafted on site from start to finish and aged the old-fashioned way, our bourbon rewards those with a sense of adventure. Enjoy it in front of the fireplace or in the great outdoors. Aged at least one year in charred new oak barrels.
Our flagship spirit, California Straight Bourbon Whiskey is the perfect marriage of barrels that have been specially selected by our distiller to showcase what Devils Creek is all about — premium craft whiskey. Located high in the California mountains, our pristine water and thin air makes an ideal environment for creating a full bodied and smooth drinking Bourbon. Bottled at cask strength, Devils Creek California Bourbon Whiskey is a “High Rye” Kentucky style Bourbon. Surprisingly smooth on the palate and very drinkable. Hints of vanilla and caramelized sugar with a nice warm finish.

When the supplies of sugar cane and molasses from the West Indies dried up during the American Revolution, colonials created a distinctly American spirit for their new nation — rye whiskey. This small batch release is skillfully blended from select barrels into a cask strength masterpiece that is sure to delight even the most discerning whiskey aficionado. Smooth and complex, bringing notes of orange chocolate, black tea, and crème brulee to your glass along with a big rye finish.
White Mountain Rum
White Mountain Rum is barrel aged in charred American oak barrels, then finished in used Zinfandel barrels from Williams Selyem in Healdsburg, CA.
Although bottled at cask strength, White Mountain Rum is quite delicate on the palate and a wonderful sipping rum thanks to careful distillation and management of its flavor profile with different barrels types. Time in high quality wine barrels have given it a delightfully fruity nose. On the palate, its time on American oak adds a hint of vanilla on top of traditionally Caribbean licorice undertones.
